Indonesian chilli sauce with a touch of sweet note

The chilli sauce "Balado" was originated from West Sumatra, Indonesia. The word Balado in local dialect means - with chilli. The cooking method of the chilli sauce is to stri fry the spices and unlike other types of chilli, Balado is cooked together with the main element it comes with. So it is generally drenched in Balado sauce. Balado main ingredients are garlic, shallots, palm oil, lime juice, shallots and of course hot red chilli. The Balado is commonly applied with all types of meats and other protein or starchy vegetables. However, the most common ones are beef, chicken, egg and potato. Because the Balado chilli is a dominant sauce already, the accompanying protein or vegetable element should be cooked plain. We recommend fried chicken, pan fried white fish, pan fried squid, boiled egg, fried diced potatoes or fried eggplant.
